Tasty Tuesday Winter specialz

Well evfurry it’z Winter Down Under an that meanz confort foodz that iz good fur you an warmz you up..

So todayz recipe iz Stuffed Roasted Butternut Pumpkin..or az some of our furriends call it..Squash..

Start with a Pumkinz…this one iz sweet an a good size..cut it in halfz length wise…careful you don’t cut yourselfz..

Now Mum did the next stepz in a furry weird way..she took out the seedz an some puplz…then she used a zester thingy to scrape outz a lot of pumpkinz…leavin a small bitz still in the skinz..yep leave the skinz on..full of vitaminz..

Chop up the pulpz seeds an all and put all the pumpkin pulpz in a pan..with some chopped garliz an I diced onion…sauté until almost soft..

Add to the pan some green pepper or capsicumz..diced…some diced pancetta (or not if you want vegetarianz) some fresh sage leavez and sauté a bit longer…

Then take off the heatz and mix wiff some partially cooked brown rice or quinoa or burghul..add some salt an pepper to tastez..and chopped pistachioz..mix well.

Now itz time to say stuff itz…

Put the fillin in both halvez of the pumpkin and squash it down…

When itz full carefully put the halvez together an rub all over with olive oilz….and some sea saltz…

Make sure the oil is all over top an bottom..then wrap in foil tightly..

Bake in a pre heated 180c oven fur one hour then checkz..if a skewer haz no troublez going through then it’z ready ..this one took abut 1 hourz an 20 minz..

Servez each half with either plain yoghurtz…crème fraiche..sour cream…or grated cheese even…mum sayz you can put anything in this really an it’z a filling mealz..it can be made vegan and vegetarianz so use your imaginationz…

And today fur extra yumm ..mum made a Apricot almond shortcakez..a loaf of wholemeal breadz an a Lemon tartz..so it’z been a yummy day for a winter…Bon Appetite evfurry..I am off to snooze…paw pats Dinnermintz xx
